Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Slice the sweet potatoes into rounds about 1/4 to 1/2 inch thick, keeping the thickness consistent.
In a large bowl, toss the slices with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
Arrange the slices in a single layer on the baking sheet, without overlapping.
Bake for 12–15 minutes, then flip each slice.
Bake for another 10–15 minutes, until the edges are browned and a fork slides easily into the center.
Optional: broil for the last 2–3 minutes for extra caramelization, watching closely.
Garnish with fresh herbs and serve warm.
