Ingredients

  • 1 tablespoon unflavored gelatin powder
  • 1/2 cup cold water
  • 3/4 cup diluted juice, herbal tea, or sugar-free flavored water
  • 1 scoop clear whey protein isolate or collagen peptides
  • 1-2 drops liquid stevia or monk fruit sweetener, optional
  • 1 teaspoon lemon juice

Equipment

  • 1 bowl for mixing
  • 1 saucepan
  • 1 whisk
  • 12 cups for servings [two pieces per serving]

Method

  1. Sprinkle gelatin over 1/4 cup cold water in a small bowl. Let sit 5 minutes to bloom.
  2. Heat the juice, tea, or flavored water in a saucepan until hot but not boiling.
  3. Pour the hot liquid over the bloomed gelatin and stir until fully dissolved and smooth.
  4. Whisk the protein powder with the remaining 1/4 cup cold water until smooth.
  5. Let the gelatin mixture cool 2–3 minutes, then slowly whisk in the protein slurry
  6. Stir in stevia and lemon juice if using.
  7. Pour into a muffin tin or small cups.
  8. Refrigerate 2–3 hours until fully set.
  9. Release with a warm knife and serve chilled.

Notes

  • Always slurry the protein powder in cold water before adding it to warm liquid to prevent clumping.
  • Do not freeze — freezing breaks the gel structure.
  • Store in an airtight container in the fridge for up to 5 days.
