Bean and Cheese Burrito Recipe

This bean and cheese burrito recipe uses seasoned, mashed pinto beans and melted cheese rolled tight in a flour tortilla, then crisped seam-side down in a hot skillet. No meat needed — the creamy beans and gooey cheese carry the whole thing. Ready in 20 minutes with pantry ingredients, and the trick to keeping it from falling apart is simple: roll it tight, and always crisp the seam shut.

Ingredients
  

  • 1 tbsp oil
  • ½ small onion diced
  • 2 garlic cloves minced
  • 1 (15 oz) can pinto beans or black beans, drained (reserve 1/4 cup of the liquid)
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • Salt and black pepper, to taste
  • 4 large flour tortillas
  • 11/2 cups shredded cheddar or Mexican blend cheese
  • Butter or oil, for crisping
  • Salsa, sour cream, or lime wedges, for serving

Equipment

  • 1 medium skillet or saucepan (for the beans)
  • 1 large nonstick skillet (for crisping the burritos)
  • 1 potato masher or fork
  • 1 Spatula

Method
 

  1. Heat the oil in a skillet over medium heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook 30 seconds more.
  2. Add the beans, cumin, chili powder, and the reserved bean liquid. Mash with a potato masher or fork until mostly smooth but still a little textured. Cook for 3–4 minutes, stirring, until thick and creamy. Season with salt and pepper.
  3. Warm the tortillas briefly so they're pliable. Spread about 1/3 cup of the bean mixture down the center of each tortilla, then top with a generous handful of shredded cheese.
  4. Fold in the two short sides, then roll tightly from the bottom up, tucking the filling in as you go, until you have a sealed burrito with the seam on the bottom
  5. Melt a little butter in a large skillet over medium heat. Place the burritos seam-side down and cook for 2–3 minutes per side, until golden and crisp, and the cheese inside is fully melted.
  6. Let rest for a minute, then slice in half and serve with salsa, sour cream, or a squeeze of lime.

Notes

  • Rolling tightly and crisping the seam shut are what actually keep the burrito from falling apart — don't skip either step.
  • For a vegan version, swap in dairy-free cheese and use oil instead of butter.
  • Canned refried beans can replace the from-scratch bean filling as a quick shortcut.
