Cottage Cheese Bagels

Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1 cup all-purpose flour (or self-rising flour)
  • teaspoon baking powder (skip if using self-rising flour)
  • ¼ teaspoon salt
  • 1 whole egg, beaten (for egg wash)
  • Toppings: everything bagel seasoning, sesame seeds, poppy seeds, or shredded cheese

Equipment

  • 1 Blender or food processor (optional)
  • 1 Large mixing bowl
  • 1 baking sheet
  • 1 pastry brush

Method
 

  1. Preheat oven to 375°F, line baking sheet with parchment.
  2. Blend cottage cheese smooth (optional).
  3. Whisk flour, baking powder, salt; add cottage cheese, stir to a shaggy dough.
  4. Knead 1-2 minutes on floured surface until smooth.
  5. Divide into 4 pieces, roll into ropes, join into rings.
  6. Place on baking sheet, brush with egg wash, top as desired.
  7. Bake 25-30 minutes until golden. Cool 15 minutes before slicing.
