Creamy Buldak Ramen (No-Scramble Egg Yolk Carbonara)

Creamy buldak ramen turns fiery Korean instant noodles into a rich, cheesy carbonara-style bowl. A no-scramble egg yolk, cream cheese, and parmesan mellow the heat into a silky sauce — no cured meat needed. It's ready in about 15 minutes and makes a satisfying spicy dinner or late-night comfort meal.

Ingredients
  

  • 1 packet spicy Korean instant ramen, carbonara-style (noodles + seasoning)
  • 1 tbsp cream cheese, softened
  • 2 tbsp grated parmesan
  • 1 whole egg yolk
  • 1 tbsp whole milk, optional (for extra creaminess)
  • 1/4 cup cooked shredded chicken (optional)
  • 1 stalk green onion, thinly sliced
  • ½ tsp toasted sesame seeds, optional (for garnish)
  • 2-3 tbsp reserved noodle water (set aside before draining)

Method
 

  1. Boil the noodles in a small pot for 4–5 minutes until just tender. Before draining, scoop out 2–3 tbsp of the hot noodle water and set aside.
  2. Drain the noodles and return them to the warm (heat-off) pot.
  3. Add the cream cheese to the still-warm noodles and toss until it melts and coats everything. Stir in the milk here too if using, for extra creaminess.
  4. No-Scramble Egg Method: In a small bowl, whisk the egg yolk with the 2–3 tbsp reserved hot noodle water a little at a time. Tempering the yolk this way keeps it silky and stops it from scrambling.
  5. Sprinkle in the ramen's seasoning packet, then pour in the tempered egg yolk and parmesan. Toss quickly with tongs until the sauce turns glossy and clings to the noodles — this whole step should take under a minute.
  6. If the sauce seems thick, a small splash of reserved noodle water will loosen it — add it a little at a time.
  7. Fold in the shredded chicken if using, and warm through for 30 seconds off the direct heat.
  8. Transfer to a bowl. Top with sliced green onion and, if using, toasted sesame seeds. Serve immediately.

Notes

  • Never add the egg yolk to a pot that's still on the burner — residual pan heat is enough; direct heat will scramble it.
