Method
- Peel the potatoes and cut them into evenly sized 1–1½-inch pieces.
- Place the potatoes in a large pot and cover with cold water by about 1 inch. Season the water generously with salt.
- Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are completely tender.
- Drain the potatoes thoroughly and return them to the warm pot. Place over low heat for 1–2 minutes to allow excess moisture to evaporate.
- Meanwhile, warm the butter and whole milk together in a small saucepan until the butter melts and the milk is hot. Do not boil.
- Mash the hot potatoes with a potato masher. For a smoother texture, use a potato ricer.
- Gradually add the warm butter and milk mixture, gently mashing until the potatoes become creamy and fluffy.
- Fold in the sour cream until well combined.
- Season with salt and freshly ground black pepper. Taste and adjust the seasoning as needed.
- Transfer to a serving bowl and garnish with fresh chives or parsley and an extra pat of butter, if desired. Serve hot.
Notes
For the creamiest texture, use Yukon Gold potatoes and avoid overmixing. Russet potatoes can be used for lighter, fluffier mashed potatoes. Add the warm milk and butter gradually so you can control the consistency.
