- Preheat oven to 375°F. Mix pecans, softened butter, brown sugar, and salt, then press evenly into a 9-inch pie plate.
- Bake for 10–15 minutes, until fragrant and lightly browned. Cool completely.
- Melt butter with brown sugar in a saucepan over medium heat. Whisk in cornstarch and salt, then gradually whisk in the milk.
- Cook, whisking constantly, until the mixture thickens and just begins to bubble, about 8–10 minutes.
- Whisk egg yolks in a bowl. Slowly add about 1 cup of the hot filling while whisking constantly, then return the mixture to the saucepan.
- Cook for 2 more minutes. Remove from heat and stir in vanilla extract.
- Strain the filling through a fine-mesh strainer into the cooled pecan crust.
- Cover and refrigerate for at least 4 hours or overnight.
- Whip heavy cream with powdered sugar to soft peaks. Spread or pipe over the chilled pie and garnish with chopped pecans.
Notes
For the cleanest slices, chill the pie for the full 4 hours before serving. The pie can be made one day ahead; add the whipped cream topping shortly before serving.
