Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Stir just until the dry streaks disappear — small lumps are fine, don't overmix.
Heat a griddle or skillet over medium heat and lightly grease with butter.
Pour about 1/4 cup of batter per hotcake. Cook 2-3 minutes until bubbles form on top and edges look set.
Flip and cook another 1-2 minutes until golden and cooked through.
Serve warm with butter and syrup.
