Egg Bites Recipe (Better Than Starbucks)

Blended cottage cheese and a water bath give these egg bites the same soft, custardy texture as Starbucks — no sous vide machine needed.

Ingredients
  

  • 8 large eggs (or 12-14 egg whites)
  • 1 cup cottage cheese (4% milkfat)
  • ½ cup shredded cheese, divided
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup mix-ins (chopped spinach, diced roasted red pepper, green onion)

Equipment

  • 1 blender
  • 1 nonstick 12-cup muffin tin (or silicone liners)
  • 1 Large roasting pan
  • 1 kettle or pot (for hot water)

Method
 

  1. Preheat oven to 325°F. Grease a 12-cup muffin tin or use silicone liners.
  2. Blend eggs, cottage cheese, salt, and pepper until completely smooth.
  3. Divide mix-ins and half the cheese among muffin cups.
  4. Pour egg mixture over mix-ins, filling cups 3/4 full. Top with remaining cheese.
  5. Place muffin tin in a roasting pan. Pour hot water halfway up the sides.
  6. Bake 22-25 minutes until set but slightly jiggly in the center.
  7. Cool in the pan 5 minutes before removing.

Notes

Skipping the water bath still works but gives a denser, less custardy texture. Use 4% milkfat cottage cheese to avoid watery bites.
