- Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly spray it.
- Add egg whites to a clean, dry bowl.
- Whip on medium-high speed for 3-4 minutes until stiff peaks form.
- Gently fold in the cornstarch and any seasoning.
- Spread the mixture onto the parchment in an even rectangle, about 1/4 inch thick.
- Bake for 8-10 minutes, until the center is set and edges are lightly golden.
- Cool for 2-3 minutes, then peel off the parchment. Fill, roll, and serve.
Notes
For a quicker stovetop version, whip egg whites to soft peaks only (skip the cornstarch), pour into a hot oiled nonstick pan, cook 1-2 minutes, flip, and cook 30 seconds more. Store unfilled wraps in the fridge up to 4 days, or freeze up to 2 months with parchment between layers.
