- Sprinkle the gelatin powder over 1/2 cup of the cold water in a bowl. Let it sit for 5 minutes until spongy.
- Pour the hot water over the bloomed gelatin and whisk until completely smooth, with no lumps.
- Stir in the remaining cold water and the juice or tea.
- Whisk in the protein powder slowly, a little at a time, to avoid clumping. Let it rest for 2 minutes and skim off any foam.
- Pour into a shallow dish or individual cups and refrigerate for 3 to 4 hours, until fully set.
- Cut into cubes, or serve directly from individual cups.

Jell-O is a registered trademark; this recipe uses plain unflavored gelatin instead and is not affiliated with the brand. Don't use raw pineapple, kiwi, or papaya juice, as their enzymes stop gelatin from setting. Store in an airtight container in the fridge for up to 5 days; don't freeze.
