Ingredients
  

  • 1 tablespoon (~7g) unflavored gelatin
  • 1 cup hot water (not boiling)
  • 1 cup cold water
  • 2 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1-2 teaspoon stevia or monk fruit sweetener (optional)

  • 1 whisk

Method
 

  1. Sprinkle the gelatin over 1/2 cup of the cold water in a bowl. Let it sit for 5 minutes until spongy.
  2. Pour the hot water over the bloomed gelatin and whisk until completely smooth, with no lumps.
  3. Stir in the lemon juice, lemon zest, and remaining 1/2 cup cold water.
  4. Add stevia or monk fruit sweetener to taste, starting with less and adjusting up.
  5. Pour into a shallow dish or individual cups and refrigerate for about 2 hours, until firm.
  6. Cut into cubes, or serve directly from cups.

Notes

Add lemon juice only after the gelatin has fully dissolved, or the mixture can turn out uneven. Use fresh lemon juice over bottled for the brightest flavor. Store in an airtight container in the fridge for up to 5 days; don't freeze.
